- Brown the ground beef in a large skillet over medium-high heat until no pink remains, about 6 to 8 minutes. Drain fat, then add onion and garlic and cook until softened, about 3 more minutes.
- Transfer the beef mixture to the slow cooker. Add ketchup, brown sugar, mustard, Worcestershire sauce, tomato paste, water, salt, and pepper. Stir until well combined.
- Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours, until the sauce is thick and glossy. If it seems thin, cook uncovered for the last 30 minutes.
- Toast the buns if desired, then pile the hot filling generously onto the buns and serve immediately.
Notes
The filling will continue to thicken as it sits, so let it rest off heat for 10 minutes if you have the time. For a bigger batch, double everything and use a 6-quart slow cooker, stirring once halfway through.
