- Place onion and garlic in the slow cooker, set roast on top, season with chili powder, cumin, salt, and pepper, and pour in broth.
- Cover and cook on low for 8 hours or high for 5 hours until meat shreds easily.
- Shred beef with two forks in the pot, discarding large bits of fat, and toss in the cooking liquid.
- Pile the beef onto tortillas for tacos, over rice for bowls, or onto rolls, spooning extra jus on top.
Notes
The beef is ready when a fork twists through it with no resistance. If your slow cooker runs hot, check at 7 hours on low. Store any leftovers in the juices so they stay moist.
