Crockpot Shredded Beef Recipe

Ingredients
  

  • 3 lb beef chuck roast
  • 1 cup beef broth
  • 1 large onion, sliced
  • 4 cloves garlic, smashed
  • 2 tbsp chili powder
  • 1 tbsp ground cumin
  • 1 tsp salt
  • ½ tsp black pepper

Method
 

  1. Place onion and garlic in the slow cooker, set roast on top, season with chili powder, cumin, salt, and pepper, and pour in broth.
  2. Cover and cook on low for 8 hours or high for 5 hours until meat shreds easily.
  3. Shred beef with two forks in the pot, discarding large bits of fat, and toss in the cooking liquid.
  4. Pile the beef onto tortillas for tacos, over rice for bowls, or onto rolls, spooning extra jus on top.

Notes

The beef is ready when a fork twists through it with no resistance. If your slow cooker runs hot, check at 7 hours on low. Store any leftovers in the juices so they stay moist.
