Ingredients

  • 1.5 lbs ground beef (80/20)
  • 1/2 cup plain breadcrumbs
  • 1 large egg
  • 2 tbsp Worcestershire sauce, divided
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Kosher salt and black pepper
  • 2 tbsp vegetable oil
  • 1 medium yellow onion, halved and thinly sliced
  • 8 oz cremini mushrooms, sliced
  • 3 tbsp all-purpose flour
  • 2 cups beef broth, preferably low-sodium
  • 2 tbsp tomato paste
  • 1 tbsp cornstarch mixed with 2 tbsp cold water

Method

  1. In a bowl, gently combine ground beef, breadcrumbs, egg, 1 tbsp Worcestershire, garlic powder, onion powder, and salt and pepper. Shape into 4 oval patties about 1/2 inch thick.
  2. Sear patties in hot oil over medium-high heat for about 4 minutes per side, until deeply browned. Transfer to a plate.
  3. Sauté onion and mushrooms in the same skillet over medium heat for 6 to 7 minutes, until softened.
  4. Stir in flour and cook 1 minute. Gradually add beef broth, remaining 1 tbsp Worcestershire, and tomato paste. Simmer 2 minutes until slightly thickened.
  5. Pour some gravy into the slow cooker. Add patties in a single layer, then top with remaining mushroom mixture. Cook on LOW 5 to 6 hours or HIGH 3 to 4 hours.
  6. Drizzle in the cornstarch slurry, switch to HIGH, and cook uncovered 10 to 15 minutes until gravy is glossy and coats a spoon.
  7. Plate patties and spoon the mushroom gravy over them. Serve hot.

Notes

The hands-on prep runs about 20 minutes, and the rest is unattended time. The slow cooking step accounts for the bulk of the total time. If your schedule is tight, cooking on high reduces the wait without sacrificing too much tenderness.
