Crockpot Ranch Chicken Recipe

Ingredients
  

  • 2 lb boneless, skinless chicken breasts
  • 1 oz packet ranch seasoning mix
  • 10.5 oz can cream of chicken soup
  • 4 oz cream cheese, cut into cubes

Method
 

  1. Place the chicken breasts in the bottom of a 6-quart slow cooker.
  2. In a small bowl, whisk the cream of chicken soup and ranch seasoning until smooth. Pour the mixture over the chicken.
  3. Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until the chicken shreds easily with two forks.
  4. Transfer the chicken to a cutting board, shred it, then return it to the slow cooker.
  5. Add the cream cheese cubes, cover, and let sit for 5 minutes. Stir until the cream cheese melts completely and the sauce is smooth.
  6. Spoon the chicken and sauce over egg noodles, rice, or mashed potatoes and serve warm.

Notes

If the sauce tightens up more than you like after cooling, thin it with a splash of milk or chicken broth when you reheat. This dish also freezes well, so double the batch on a Sunday and stash half for later.
