- Pat the chuck roast dry and season with salt, pepper, garlic powder, and onion powder. Sear in a hot skillet until deeply browned on all sides, about 4 minutes per side.
- Transfer the roast to the slow cooker. Scatter the sliced bell peppers and onion around the meat. Pour in the Worcestershire sauce and beef broth.
- Cover and cook on low for 8 to 10 hours or high for 4 to 6 hours, until the beef shreds easily.
- Remove the roast, shred with two forks, and stir back into the slow cooker with the peppers and onions. Let sit for 5 minutes.
- Toast the hoagie rolls, pile the meat mixture onto the bottom halves, top with provolone, and broil for 1 to 2 minutes until melted and bubbly. Close the sandwiches and serve immediately.
Notes
Times are based on the low setting; for high heat, cook about 4 to 6 hours. The beef will be more tender if you use low heat for the full time. If you prefer Cheez Whiz, warm it and drizzle over the meat instead of broiling provolone.
