Crockpot Pepper Steak Recipe

Ingredients
  

  • 1.5 lb beef chuck, sliced into thin strips
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 2 tbsp vegetable oil, divided
  • 2 bell peppers, any color, sliced
  • 1 large yellow onion, sliced
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1/4 cup low-sodium soy sauce
  • 1 cup beef broth
  • 2 tbsp brown sugar, packed
  • 1 tbsp rice vinegar
  • 1 tsp toasted sesame oil
  • 2 tbsp cornstarch, whisked with 2 tbsp cold water
  • Sliced green onions and toasted sesame seeds, for serving

Method
 

  1. Season beef with salt and pepper. Heat 1 tbsp oil in a skillet over medium-high heat and brown beef in two batches, about 2 minutes per side, then transfer to slow cooker.
  2. Lower heat to medium, add remaining 1 tbsp oil, and cook bell peppers and onion 5 minutes until edges char. Stir in garlic and ginger 1 minute, then scrape into slow cooker.
  3. Add soy sauce, beef broth, brown sugar, rice vinegar, and sesame oil to slow cooker, stir, cover and cook on low 6-7 hours or high 3-4 hours until beef is tender.
  4. Stir in cornstarch slurry, cover, and cook on high 30 minutes until sauce thickens. Serve over rice with green onions and sesame seeds.

Notes

Times listed are for high setting; for low setting, cook 6-7 hours. The 30-minute thickening step applies regardless of the setting you choose for the main cook.
