Method
- Season beef with salt and pepper. Heat 1 tbsp oil in a skillet over medium-high heat and brown beef in two batches, about 2 minutes per side, then transfer to slow cooker.
- Lower heat to medium, add remaining 1 tbsp oil, and cook bell peppers and onion 5 minutes until edges char. Stir in garlic and ginger 1 minute, then scrape into slow cooker.
- Add soy sauce, beef broth, brown sugar, rice vinegar, and sesame oil to slow cooker, stir, cover and cook on low 6-7 hours or high 3-4 hours until beef is tender.
- Stir in cornstarch slurry, cover, and cook on high 30 minutes until sauce thickens. Serve over rice with green onions and sesame seeds.
Notes
Times listed are for high setting; for low setting, cook 6-7 hours. The 30-minute thickening step applies regardless of the setting you choose for the main cook.
