Crockpot Overnight Oatmeal Recipe

Ingredients
  

  • 1 cup steel-cut oats
  • 4 cups water
  • 1 cup milk, any type
  • 2 tablespoons maple syrup or brown sugar
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cinnamon stick

Method
 

  1. Grease the slow cooker insert well with butter or cooking spray. Combine the steel-cut oats, 4 cups water, 1 cup milk, maple syrup, salt, vanilla, and cinnamon stick. Stir, cover, and cook on low for 7 to 8 hours.
  2. Carefully remove the lid, discard the cinnamon stick, and stir until creamy. If the oatmeal is too thick, stir in a little warm milk to loosen it.
  3. Spoon into bowls and top with maple syrup, toasted nuts, fresh fruit, or whatever you like.

Notes

The oatmeal thickens as it cools. If you make a big batch for the week, portion it into sealed containers and add a splash of milk when reheating.
