Ingredients

  • 3 lbs Yukon Gold potatoes, peeled and cut into 1-inch cubes
  • 1 cup low-sodium chicken broth
  • 4 garlic cloves, minced
  • 1/2 cup unsalted butter, cubed
  • 1/2 cup heavy cream, warmed
  • 1 tsp fine sea salt
  • 1/2 tsp black pepper

Method

  1. Place the potatoes, broth, garlic, and salt in a 6-quart slow cooker. Stir to combine.
  2. Cover and cook on high for 3 to 4 hours or low for 6 to 7 hours, until the potatoes are fork-tender.
  3. Add the butter and warm cream. Mash with a potato masher or hand mixer until creamy.
  4. Spoon into a serving bowl, top with butter and pepper, and serve hot.

Notes

For the low setting, cook 6 to 7 hours. You can swap in 4 oz cream cheese for half the butter if you want an extra-rich mash. These potatoes hold well on the “warm” setting for up to 2 hours; stir occasionally and add a splash of milk if they thicken.
