- Heat olive oil in a large skillet over medium-high. Season chicken with salt and pepper, sear 3 minutes per side until browned, then transfer to crockpot. (You can skip searing if pressed for time.)
- Add garlic, sun-dried tomatoes, Italian seasoning, red pepper flakes, and chicken broth to the crockpot; stir.
- Cover and cook on low for 4 to 5 hours or high 2 to 3 hours, until chicken reaches 165°F and is tender.
- Remove chicken to a plate. Whisk slurry into sauce, then stir in heavy cream and Parmesan. Return chicken and spoon sauce over top.
- Serve over rice or pasta, garnished with extra Parmesan and fresh basil.
Notes
If you skip the searing step, increase the salt slightly to compensate. The sauce thickens further as it stands; for an even thicker consistency right away, let it bubble on high for 5 extra minutes after adding the cream and slurry.
