- Place chicken in a 6-quart slow cooker and season with the dressing mix and a few grinds of pepper. Top with cream cheese cubes and pour the soup over all without stirring.
- Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours until the chicken reaches 165°F and shreds easily.
- Transfer chicken to a cutting board and shred, then vigorously whisk the sauce in the slow cooker until smooth. Stir the chicken back in and warm through for 5 minutes.
- Spoon over pasta, rice, or rolls and serve hot with optional parsley or Parmesan on top.
Notes
This recipe is very forgiving—you can swap in chicken thighs without changing a thing. If the sauce seems too thick after stirring, thin it with a splash of warm milk or pasta water.
