Crockpot Hot Beef Sandwiches Recipe

Ingredients
  

  • 3 to 4 lb chuck roast
  • 1 tbsp vegetable oil
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • 1 (1 oz) packet onion soup mix
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 4 cloves garlic, minced
  • 1 large yellow onion, sliced thin
  • 6 to 8 hoagie rolls or sturdy burger buns
  • Butter, for toasting

Method
 

  1. Pat the roast dry, season with salt and pepper, and sear in hot oil over medium-high heat for 3 to 4 minutes per side.
  2. Place the onion and garlic in the slow cooker, set the roast on top, and add the soup mix, broth, and Worcestershire. Cover and cook on low for 8 to 10 hours or high for 4 to 5 hours.
  3. Remove the roast, shred with two forks, skim off excess fat if desired, and return the beef to the juices.
  4. Butter and toast the rolls until golden, then pile the shredded beef onto the rolls and serve with broth on the side for dipping.

Notes

The long cook time is hands-off slow cooker time, so total includes 8 hours on low. If you like the beef on the saucier side, ladle an extra spoonful of broth over the top right after you pile it on the roll.
