Crockpot Honey Garlic Chicken Recipe

Ingredients
  

  • 2 lbs boneless skinless chicken thighs
  • 1/3 cup honey
  • 1/4 cup low-sodium soy sauce
  • 5 cloves garlic, minced
  • 2 tbsp ketchup
  • 1 tbsp cornstarch
  • 2 tbsp cold water
  • Salt and black pepper

Method
 

  1. Pat the chicken thighs dry, season with salt and pepper, and place in a single layer in the slow cooker.
  2. Whisk the honey, soy sauce, garlic, and ketchup until smooth, then pour over the chicken.
  3. Cover and cook on LOW for 4 to 5 hours, until the chicken is tender and cooked through.
  4. Transfer the chicken to a plate, whisk cornstarch and cold water into the sauce, and cook on HIGH for about 10 minutes until thickened.
  5. Return the chicken to the slow cooker, toss to coat in the glaze, and serve over rice.

Notes

Cook times can vary based on your slow cooker; start checking the chicken at the 4-hour mark for thighs. If the sauce hasn’t thickened enough after 10 minutes, give it a few more minutes and stir in an extra teaspoon of cornstarch slurry if needed. Leftover sauce is excellent spooned over roasted vegetables the next day.
