- Pat the chicken thighs dry, season with salt and pepper, and place in a single layer in the slow cooker.
- Whisk the honey, soy sauce, garlic, and ketchup until smooth, then pour over the chicken.
- Cover and cook on LOW for 4 to 5 hours, until the chicken is tender and cooked through.
- Transfer the chicken to a plate, whisk cornstarch and cold water into the sauce, and cook on HIGH for about 10 minutes until thickened.
- Return the chicken to the slow cooker, toss to coat in the glaze, and serve over rice.
Notes
Cook times can vary based on your slow cooker; start checking the chicken at the 4-hour mark for thighs. If the sauce hasn’t thickened enough after 10 minutes, give it a few more minutes and stir in an extra teaspoon of cornstarch slurry if needed. Leftover sauce is excellent spooned over roasted vegetables the next day.
