Ingredients

  • 1.5 lbs (680g) ground beef, 80/20
  • 1/2 cup (40g) plain breadcrumbs
  • 1 large egg
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 2 tbsp vegetable oil, divided
  • 2 medium onions, thinly sliced
  • 2 garlic cloves, minced
  • 2 cups (480ml) beef broth
  • 2 tbsp Worcestershire sauce
  • 2 tbsp cornstarch mixed with 2 tbsp cold water

Method

  1. In a large bowl, mix the ground beef, breadcrumbs, egg, onion powder, garlic powder, salt, and pepper until just combined. Shape into 4 oval patties about 1/2 inch thick.
  2. Heat 1 tbsp oil in a large skillet over medium-high heat. Sear the patties for 3 to 4 minutes per side until deeply browned, then transfer to a plate.
  3. Add remaining 1 tbsp oil to the skillet, then sauté the onions with a pinch of salt for 5 minutes until soft. Stir in garlic for 1 minute, then deglaze with 1/4 cup beef broth.
  4. Transfer onions to a slow cooker, nestle patties on top, and pour in the rest of the broth and Worcestershire sauce. Cover and cook on low 6 to 7 hours or high 3 to 4 hours.
  5. Remove patties, stir the cornstarch slurry into the liquid, and cook on high for 15 to 20 minutes until thickened. Adjust seasoning, spoon gravy over patties, and serve.

Notes

If you prefer an extra-thick gravy, use an additional tablespoon of cornstarch mixed with water. The patties can be formed and refrigerated overnight before browning; just add 5 minutes to the cook time if starting cold.
