Crockpot Green Chicken Chili Recipe

Ingredients
  

  • 1 ½ lbs boneless, skinless chicken thighs
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 (4-oz) cans diced green chiles
  • 1 cup salsa verde
  • 1 (15-oz) can cannellini beans, drained and rinsed
  • 1 cup low-sodium chicken broth
  • 1 tsp ground cumin
  • ½ tsp ground coriander
  • ½ tsp kosher salt
  • 4 oz cream cheese, cut into cubes

Method
 

  1. Sauté the onion in a little oil over medium heat until soft, about 5 minutes. Add the garlic and cook 30 seconds more. Transfer to the slow cooker.
  2. Add the chicken thighs, green chiles, salsa verde, cumin, coriander, salt, and broth. Cover and cook on low for 6 to 7 hours or high for 3 to 4 hours, until chicken shreds easily.
  3. Remove the chicken, shred with two forks, and return it to the pot. Stir in the drained beans and warm on low for 10 minutes.
  4. Turn to warm, add the cream cheese, and stir until melted and smooth. Ladle into bowls and serve with avocado, cilantro, and lime.

Notes

If you're using chicken breasts, check them at the early end of the cook time so they don't dry out. The chili thickens as it sits, so leftovers may need a splash of broth when reheated.
