Crockpot Green Beans with Smoky Bacon Recipe

Ingredients
  

  • 2 lb fresh green beans, trimmed
  • 4 slices thick-cut bacon, chopped
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 1/2 tsp smoked paprika
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 tbsp apple cider vinegar

Method
 

  1. Crisp the bacon in a skillet over medium heat, 5 to 7 minutes, then remove the bacon and sauté the onion in the fat until translucent, about 3 minutes. Add garlic and cook 30 seconds.
  2. Layer green beans, onion mixture, bacon, broth, paprika, salt, and pepper in the slow cooker. Stir once, cover, and cook on LOW 5 to 6 hours or HIGH 2 to 3 hours until tender.
  3. Stir in the apple cider vinegar, taste and adjust salt, then spoon into a serving bowl and serve hot.

Notes

Fresh green beans give the best texture, but frozen work with a shorter cook time (see the table above). If your bacon is very salty, start with 1/4 tsp salt and add more after cooking. The recipe needs no resting time, but leftover beans are wonderful the next day.
