Crockpot Great Northern Beans Recipe

Ingredients
  

  • 1 lb dried Great Northern beans, rinsed and picked over
  • 1 smoked ham hock or meaty ham bone (optional)
  • 1 small yellow onion, diced
  • 3 garlic cloves, smashed
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 4 cups vegetable or chicken broth
  • 2 bay leaves
  • 1 tsp dried thyme
  • Salt and black pepper, to taste
  • 1 tbsp apple cider vinegar or fresh lemon juice

Method
 

  1. Place the ham hock, onion, carrots, celery, garlic, and bay leaves in a 6-quart slow cooker. Add the rinsed beans on top, then the thyme, 1 teaspoon salt, and several cracks of pepper.
  2. Pour in the broth and enough water to cover the beans by about an inch. Cover and cook on low for 8 hours, or high for 5 to 6 hours.
  3. Remove the bay leaves. Take out the ham hock, shred any meat, and return the meat to the pot. Stir in the vinegar, then taste and adjust salt and pepper.
  4. Ladle into bowls, garnish with fresh parsley, and serve warm.

Notes

If you soaked the beans overnight, shorten the cook time to 6 hours on low. For a thicker broth, mash a few beans against the side of the slow cooker with a spoon before serving.
