Method
- Place the ham hock, onion, carrots, celery, garlic, and bay leaves in a 6-quart slow cooker. Add the rinsed beans on top, then the thyme, 1 teaspoon salt, and several cracks of pepper.
- Pour in the broth and enough water to cover the beans by about an inch. Cover and cook on low for 8 hours, or high for 5 to 6 hours.
- Remove the bay leaves. Take out the ham hock, shred any meat, and return the meat to the pot. Stir in the vinegar, then taste and adjust salt and pepper.
- Ladle into bowls, garnish with fresh parsley, and serve warm.
Notes
If you soaked the beans overnight, shorten the cook time to 6 hours on low. For a thicker broth, mash a few beans against the side of the slow cooker with a spoon before serving.
