Method
- Season chicken with salt and pepper. Melt 2 tbsp of the butter in a skillet over medium-high heat. Sear chicken 3 minutes per side until golden, then transfer to slow cooker.
- Reduce heat to medium, melt remaining butter in the skillet. Add garlic, cook 1 minute. Stir in chicken broth, Italian seasoning, and red pepper flakes. Pour over chicken.
- Cover and cook on low 4 hours or high 2½ hours, until chicken is tender and reaches 165°F. Remove chicken to a plate.
- Whisk cream cheese into the liquid in the slow cooker until smooth, then whisk in heavy cream and Parmesan. Return chicken, cover, and cook on high 15 minutes.
- Shred chicken in the sauce. Garnish with parsley and extra Parmesan, and serve hot.
Notes
The sauce will thicken as it rests. If it gets too thick after sitting, stir in a splash of warm milk or broth when you reheat it.
