Ingredients

  • 3 lb chuck roast
  • 2 tbsp olive oil
  • 1 tsp kosher salt
  • 1/2 tsp freshly ground black pepper
  • 2 tbsp unsalted butter
  • 3 large yellow onions, thinly sliced
  • 4 cloves garlic, minced
  • 1 cup low sodium beef broth
  • 1/2 cup dry red wine
  • 2 tbsp Worcestershire sauce
  • 4 to 5 sprigs fresh thyme
  • 1 bay leaf
  • 6 oz Gruyère cheese, shredded

Method

  1. Season the roast with salt and pepper. Sear in hot olive oil until deeply browned on all sides, about 3 to 4 minutes per side. Transfer to the slow cooker.
  2. In the same skillet, melt the butter over medium heat. Add the onions and a pinch of salt, cook until deep golden brown, 15 to 20 minutes. Stir in the garlic during the last minute, then spoon the onions over the roast.
  3. Pour the broth, wine, and Worcestershire around the beef. Add the thyme and bay leaf. Cover and cook on Low for 8 to 10 hours, or High for 5 to 6 hours, until fork tender.
  4. Preheat the broiler. Shred the meat and discard the bay leaf and thyme stems. Toss the shredded beef with the juices, spoon into an oven safe dish, top with Gruyère, and broil 2 to 3 minutes until bubbly and golden. Serve hot.

Notes

Actual cook time will vary a bit by slow cooker; test for tenderness after 8 hours on Low or 5 hours on High. If you’d like a thicker gravy, stir a cornstarch slurry into the jus after removing the beef and cook on High for 15 minutes. The cheese topping is best fresh, so reheat the meat separately and broil with new cheese when enjoying leftovers.
