Ingredients

  • 2 lbs ground beef (80/20)
  • 1 packet (1 oz) dry onion soup mix
  • ½ cup plain breadcrumbs
  • 2 large eggs
  • ¼ cup milk
  • 1 tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • ½ tsp black pepper
  • 1 can (10.5 oz) condensed French onion soup
  • ½ cup beef broth
  • 6 slices Swiss cheese
  • 2 tbsp cornstarch mixed with 2 tbsp cold water

Method

  1. In a large bowl, gently mix ground beef, onion soup mix, breadcrumbs, eggs, milk, Worcestershire sauce, garlic powder, and black pepper until just combined.
  2. Shape into an 8-inch loaf and place in the slow cooker. Pour condensed soup and beef broth around the loaf.
  3. Cover and cook on low for 6 to 7 hours, or on high for 3½ to 4 hours, until internal temperature reaches 160°F.
  4. Lay Swiss cheese slices over the top of the meatloaf. Cover again and cook on warm or low for 5 to 10 minutes until melted.
  5. Lift meatloaf out and tent with foil. Stir cornstarch slurry into juices, turn to high, and cook uncovered 5 to 7 minutes until thickened.
  6. Slice the meatloaf and serve with gravy spooned over.

Notes

The cook time given is for the low setting; high setting cuts it roughly in half. Let the meatloaf rest 10 minutes before slicing for the cleanest cuts. Gravy will continue to thicken as it cools, so serve it right away.
