Ingredients

  • 1.5 lbs boneless skinless chicken breasts or thighs
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can whole kernel corn, drained
  • 1 (10 oz) can diced tomatoes with green chilies
  • 8 oz cream cheese, cut into cubes
  • 2 tbsp taco seasoning
  • ½ tsp salt
  • Warm tortillas, rice, cheese, cilantro, and lime for serving

Method

  1. Place chicken in a 6-quart slow cooker. Add beans, corn, tomatoes, taco seasoning, and salt. Scatter cream cheese on top.
  2. Cover and cook on low 6 to 7 hours or high 3 to 4 hours, until chicken shreds easily.
  3. Remove chicken, shred with two forks, return to cooker, and stir until cream cheese melts into a creamy sauce.
  4. Spoon into tortillas or over rice; top with cheese, cilantro, and lime.

Notes

If your slow cooker runs hot, start checking at the early end of the time range. The sauce will look thin when you first stir, but it thickens as it rests off heat for a few minutes.
