Ingredients

  • 2 lbs boneless skinless chicken breasts
  • 1 packet (1 oz) ranch seasoning mix
  • 8 oz cream cheese, softened and cut into cubes
  • ½ cup cooked crumbled bacon
  • 1 cup shredded sharp cheddar
  • Sliced green onions, optional

Method

  1. Place the chicken in a 6-quart slow cooker. Sprinkle with ranch seasoning, then scatter the cubed cream cheese on top. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  2. Shred the chicken with two forks directly in the slow cooker and stir into the melted cream cheese.
  3. Fold in the bacon and cheddar. Cover and cook on high for 15 minutes, until the cheese is melted and bubbling.
  4. Toast buns, pile the hot chicken mixture on, scatter green onions on top, and serve immediately.

Notes

If you prefer the low-and-slow method, cook the chicken on low for 6-7 hours (360-420 mins). The sauce thickens as it sits, so stir in a splash of milk when reheating leftovers. This mixture also works well as a dip for tortilla chips if you skip the buns.
