- Wash the collard leaves, strip them from the stems, and chop into 2-inch ribbons.
- Place the turkey legs in a 6-quart slow cooker, top with onion, garlic, and collards, then sprinkle with paprika and pepper. Pour the broth around the edges, cover, and cook on low for 8 hours.
- Remove the turkey, shred the meat, and discard bones and skin. Return the meat to the pot, stir in the vinegar and hot sauce, and add salt to taste. Ladle into bowls with plenty of pot liquor.
Notes
If you’re short on time, cook on high for 3–4 hours instead. The pot liquor is deeply savory and worth spooning over rice or grits. Taste for salt only after adding the vinegar—the broth and smoked turkey already carry a good amount.
