Crockpot Chili Mac Recipe

Ingredients
  

  • 1 lb ground beef
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp chili powder
  • 2 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp salt, plus more to taste
  • 1/2 tsp black pepper
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 (8 oz) can tomato sauce
  • 2 cups beef broth
  • 1 (15 oz) can kidney beans, drained and rinsed
  • 8 oz elbow macaroni, uncooked
  • 2 cups shredded sharp cheddar cheese
  • 4 oz cream cheese, cubed and softened (optional)

Method
 

  1. Brown the ground beef and onion in a skillet, then add garlic and spices.
  2. Transfer to crockpot; stir in diced tomatoes, tomato sauce, broth, beans, salt, and pepper.
  3. Cover and cook on low for 4-6 hours or high for 2-3 hours.
  4. Turn heat to high, stir in the macaroni, cover and cook 20-30 minutes until tender.
  5. Turn off heat, fold in cheddar and cream cheese until melted, then serve right away.

Notes

If you prefer a thicker chili mac, let the finished dish sit uncovered for 5 minutes before serving. For extra smoky flavor, use fire roasted tomatoes. The cook time is based on the low setting, if using high the total time will be about 2 hours and 30 minutes.
