- Stir together chicken, cream cheese, buffalo sauce, and ranch dressing in a 1.5 to 2-quart slow cooker. Cover and cook on LOW 2 to 3 hours or HIGH 1 to 2 hours.
- After 1 hour on HIGH or 1.5 hours on LOW, stir the dip, then sprinkle cheddar on top. Cover and cook until melted, 15 to 20 minutes.
- Switch to WARM, top with scallions and blue cheese if using. Serve with chips and celery.
Notes
For the smoothest dip, use full-fat cream cheese and ranch dressing. Low-fat versions can turn grainy when held on warm. If the dip tightens up after sitting out, stir in a tablespoon of milk or extra dressing. Cook time can vary; the dip is ready when fully melted and bubbly at the edges.
