- Pat the chicken thighs dry, then season with the cumin, oregano, and salt. Toss to coat.
- In a blender, combine the tomatoes, chipotles, adobo sauce, onion, garlic, and broth. Blend until smooth. Pour the sauce over the chicken and place it all in the slow cooker, adding the bay leaf.
- Cover and cook on LOW for 4 hours, or until the chicken is very tender and shreds easily.
- Remove the chicken to a bowl, discard the bay leaf, and shred with two forks.
- Return the shredded chicken to the sauce in the slow cooker, stir well, then pile into warm tortillas.
Notes
If the sauce looks thin after shredding, simmer it on the stovetop for a few minutes to thicken while you shred the chicken. This dish develops even more flavor overnight, so it’s a great make-ahead meal.
