- Place chicken breasts in the slow cooker, sprinkle with taco seasoning, and pour salsa on top.
- Cook on low for 6 to 8 hours or high for 3 to 4 hours until chicken reaches 165°F and shreds easily.
- Shred the chicken with two forks, return it to the slow cooker, and stir to coat in the juices.
- Warm tortillas in a dry skillet, fill with shredded chicken, squeeze lime over the top, and add your favorite toppings.
Notes
The salsa is the main source of salt and acidity, so taste the finished chicken before adding any extra salt. If you plan to let the filling sit on “warm” for a while, stir in a little broth to keep it from drying out.
