- Pat chicken dry and season both sides with salt, pepper, and Italian seasoning.
- Spoon ⅓ of the marinara sauce into a 6-quart slow cooker. Place chicken in a single layer, scatter garlic on top, pour remaining sauce over, and sprinkle Parmesan over everything.
- Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until chicken reaches 165°F (74°C) and shreds easily.
- Sprinkle mozzarella over the chicken, cover, and let it melt for 10 to 15 minutes. Spoon sauce from the pot over each piece and serve hot.
Notes
If your slow cooker tends to run on the hotter side, start checking for doneness a half hour before the minimum cook time. A quick broil for 1 to 2 minutes after the cheese melts can give you a few golden spots, but keep a close eye so it does not burn.
