Crockpot Chicken Broccoli Rice Recipe

Ingredients
  

  • 1 lb boneless skinless chicken breasts
  • 1 (10.5 oz) can cream of chicken soup
  • 1 cup chicken broth
  • 1/4 cup milk
  • 1/2 cup diced yellow onion
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1/2 tsp dried thyme
  • 1/2 tsp black pepper
  • Salt, to taste
  • 1 cup uncooked instant rice
  • 2 cups fresh broccoli florets, cut into small pieces
  • 1 cup shredded sharp cheddar cheese

Method
 

  1. In a slow cooker, whisk together cream of chicken soup, chicken broth, milk, paprika, thyme, and black pepper. Stir in onion and garlic, then add chicken breasts. Cover and cook on HIGH for 2 hours.
  2. Transfer chicken to a board, shred with two forks, then return to the slow cooker.
  3. Stir in instant rice and broccoli florets. Cover and cook on HIGH for 20 to 25 minutes, until rice is tender.
  4. Turn off slow cooker, stir in shredded cheddar cheese until melted. Serve hot.

Notes

If you prefer low and slow, cook the chicken on LOW for 4 to 5 hours instead. Keep in mind that the rice still needs a high-heat finish, so switch to HIGH when you add it. The dish thickens as it sits; add a little milk when reheating.
