Crockpot Broccoli Cheese Soup Recipe

Ingredients
  

  • 4 cups broccoli florets
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 4 cups low-sodium vegetable or chicken broth
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 8 oz sharp cheddar cheese, shredded
  • 4 oz cream cheese, softened and cut into cubes
  • 1/2 cup half-and-half

Method
 

  1. Combine broccoli, onion, garlic, broth, salt, and pepper in the slow cooker. Cover and cook on low 4 to 5 hours or high 2 to 3 hours until very tender.
  2. Stir in cream cheese until melted, then gradually add cheddar, stirring until smooth.
  3. Stir in half-and-half and warm through on low 5 to 10 minutes. Taste and season.
  4. Ladle into bowls, top with extra cheese and pepper, and serve hot.

Notes

For a smoother texture, blend the soup with an immersion blender before adding the cheese. Leftovers thicken in the fridge, so add a splash of broth when reheating.
