Crockpot Black-Eyed Peas Recipe

Ingredients
  

  • 1 lb dried black-eyed peas
  • 1 smoked ham hock (about 1 lb)
  • 1 medium yellow onion, diced
  • 3 garlic cloves, minced
  • 2 dried bay leaves
  • 6 cups chicken broth
  • Pinch of cayenne pepper (optional)
  • Salt and black pepper, to taste
  • Apple cider vinegar or hot pepper vinegar, for serving
  • Cooked white rice and hot sauce, for serving

Method
 

  1. In a skillet over medium heat, sauté the onion and garlic in oil until softened, about 5 minutes.
  2. Transfer the sautéed mixture to a 6-quart slow cooker. Add the peas, ham hock, bay leaves, cayenne, and broth. Stir, cover, and cook on low for 8 to 10 hours or high for 5 to 6 hours.
  3. Remove the ham hock, shred the meat, and discard the bone. Stir the meat back into the peas.
  4. Taste, add salt and pepper, and splash in vinegar. Serve over rice with hot sauce.

Notes

Cooking on low for the full 8 to 10 hours gives the most tender, creamy peas. If your ham hock is particularly salty, you may need little to no extra salt.
