- In a skillet over medium heat, sauté the onion and garlic in oil until softened, about 5 minutes.
- Transfer the sautéed mixture to a 6-quart slow cooker. Add the peas, ham hock, bay leaves, cayenne, and broth. Stir, cover, and cook on low for 8 to 10 hours or high for 5 to 6 hours.
- Remove the ham hock, shred the meat, and discard the bone. Stir the meat back into the peas.
- Taste, add salt and pepper, and splash in vinegar. Serve over rice with hot sauce.
Notes
Cooking on low for the full 8 to 10 hours gives the most tender, creamy peas. If your ham hock is particularly salty, you may need little to no extra salt.
