Ingredients

  • 2 lb beef chuck roast, cut into 1-inch cubes
  • 1 tsp kosher salt, plus more to taste
  • 1 tsp black pepper
  • 2 tbsp vegetable oil
  • 1 large yellow onion, diced
  • 3 cloves garlic, minced
  • 3 tbsp all-purpose flour
  • 1 cup beef broth, low-sodium
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 bay leaf
  • 1 tbsp cornstarch mixed with 2 tbsp cold water (optional)
  • Fresh parsley for garnish

Method

  1. Season beef with salt and pepper. Sear in hot oil in batches until deep brown, about 2 minutes per side, then transfer to slow cooker.
  2. Cook onion in same skillet until golden, about 5 minutes. Add garlic, cook 30 seconds. Stir in flour and cook 1 minute.
  3. Slowly whisk in broth, Worcestershire, thyme, and bay leaf. Simmer 2 minutes, then pour over beef in slow cooker. Cover and cook on low 7-8 hours or high 4-5 hours.
  4. Remove bay leaf. If desired, stir in cornstarch slurry and cook on high 10-15 minutes until glossy. Taste, adjust salt and pepper, then spoon over your choice of base and garnish with parsley.

Notes

If cooking on high, reduce the time to 4-5 hours and check that the beef shreds easily. The cornstarch slurry is optional but yields a glossier, thicker gravy; add it only at the end. Leftovers taste even better the next day.
