Crockpot Beef and Broccoli Recipe

Ingredients
  

  • 2 lbs beef chuck roast, cut into 1-inch strips
  • ½ cup low-sodium soy sauce
  • ¼ cup brown sugar
  • ½ cup low-sodium beef broth
  • 3 garlic cloves, minced
  • 1 tbsp grated fresh ginger
  • 2 tbsp cornstarch
  • 2 tbsp cold water
  • 4 cups fresh broccoli florets
  • 1 tsp toasted sesame oil
  • 1 tsp rice vinegar
  • Toasted sesame seeds and sliced green onions, for serving

Method
 

  1. Whisk soy sauce, brown sugar, beef broth, garlic, and ginger in a bowl until the sugar dissolves.
  2. Place beef in a slow cooker, pour the sauce over, stir to coat, cover, and cook on LOW for 6 hours or HIGH for 3 hours until fork-tender.
  3. Mix cornstarch and cold water into a slurry, stir into the simmering sauce, add broccoli, cover, and cook on HIGH for 20-30 minutes until the sauce is glossy and the broccoli is crisp-tender.
  4. Turn off the heat, stir in sesame oil and rice vinegar, spoon over rice, and top with sesame seeds and green onions. Serve hot.

Notes

This dish is best served right away while the broccoli keeps its crunch. If you like an even thicker sauce, let it sit uncovered for a few minutes after cooking; it will continue to thicken as it cools slightly.
