Crockpot BBQ Chicken Sandwiches Recipe

Ingredients
  

  • 1½ lbs boneless skinless chicken breasts
  • 1½ cups BBQ sauce
  • 2 tbsp apple cider vinegar
  • 2 tbsp brown sugar
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp salt
  • ¼ tsp black pepper

Method
 

  1. Grease the slow cooker insert. Whisk the BBQ sauce, apple cider vinegar, brown sugar, garlic powder, onion powder, salt, and pepper in a bowl. Pour a thin layer into the slow cooker.
  2. Nestle the chicken in a single layer and pour the remaining sauce over the top. Cover and cook on low 6 to 8 hours or high 3 to 4 hours, until the chicken shreds easily.
  3. Transfer the chicken to a cutting board, shred with two forks, then return it to the sauce and stir to coat. Thicken uncovered on high 15 to 20 minutes if needed.
  4. Toast the buns, pile on the hot BBQ chicken, add coleslaw if desired, and serve right away.

Notes

Cooking on high takes about 3 to 4 hours, on low about 6 to 8 hours. Leftovers are great spooned over rice or stuffed into tacos.
