Ingredients

  • 3 to 4 lbs beef brisket flat
  • 1 tbsp smoked paprika
  • 1 tbsp garlic powder
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1 cup BBQ sauce
  • 1/4 cup apple cider vinegar
  • 1/4 cup brown sugar
  • 2 tbsp Worcestershire sauce
  • 1 tsp liquid smoke
  • 1 large onion, sliced
  • 1 tbsp neutral oil

Method

  1. Pat brisket dry and rub all over with smoked paprika, garlic powder, salt, and pepper. Heat oil in a skillet over medium-high and sear brisket on all sides until deeply browned, about 3-4 minutes per side.
  2. Whisk together BBQ sauce, vinegar, brown sugar, Worcestershire, and liquid smoke until smooth.
  3. Spread onion slices in the slow cooker, place brisket on top, and pour sauce over. Cover and cook on LOW for 8 to 10 hours, until fork-tender.
  4. Transfer brisket to a board, shred with two forks, and return to the pot to coat in sauce. Serve warm on buns with extra sauce.

Notes

Cook times can vary slightly depending on the size and thickness of your brisket. For the most tender results, cook until the meat shreds easily with a fork. If you like extra sauce, double the sauce ingredients.
