Ingredients
  

  • 6 medium apples (such as Granny Smith)
  • 1/3 cup brown sugar, packed
  • 2 tbsp granulated sugar
  • 2 tbsp cornstarch
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 tbsp lemon juice
  • Pinch of salt
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar (for topping)
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt (for topping)
  • 1/4 cup cold unsalted butter
  • 1/2 cup milk
  • 1 tsp vanilla extract

Method
 

  1. Core and slice the apples, then toss with brown sugar, granulated sugar, cornstarch, cinnamon, nutmeg, lemon juice, and a pinch of salt. Transfer to a greased slow cooker.
  2. Whisk flour, 1/4 cup sugar, baking powder, and salt for the topping. Cut in cold butter until crumbly, then stir in milk and vanilla just until a shaggy dough forms.
  3. Drop spoonfuls of the dough over the apples, cover, and cook on high for 2 to 3 hours. Uncover for the last 30 minutes to crisp the top.
  4. Scoop into bowls while hot and serve, with vanilla ice cream if you like.

Notes

Use firm apples like Granny Smith or Honeycrisp. If cooking on low, the time increases to 4 to 5 hours. Uncovering at the end helps the topping firm up; for an extra-crisp top, broil briefly in a broiler-safe insert right before serving.
