- Quarter 8 unpeeled apples, then place them in a 6-quart slow cooker with the cinnamon sticks, cloves, and orange peel. Pour in 10 cups water.
- Cover and cook on low for 6 hours, until the apples are very tender.
- Uncover and mash the fruit gently with a potato masher. Cover again and cook on low for 1 more hour.
- Strain the cider through a fine-mesh strainer into a bowl, pressing the solids firmly. Discard the pulp and serve warm.
Notes
The recipe yields a cider that is unsweetened by design. Taste it after straining and stir in maple syrup or brown sugar if you want a sweeter drink. If your slow cooker runs hot, check the apples at the 5-hour mark. They should be completely soft but not disintegrating into mush.
