Crockpot Angel Chicken Recipe

Ingredients
  

  • 2 lbs boneless skinless chicken breasts
  • 1 (10.5 oz) can cream of chicken soup
  • 1 (.7 oz) packet Italian dressing mix
  • 8 oz cream cheese, cut into cubes
  • Salt and black pepper, to taste
  • 1 lb angel hair pasta, cooked, for serving

Method
 

  1. Season the chicken breasts with salt and pepper. Place them in a single layer in a 6-quart slow cooker.
  2. In a bowl, whisk the cream of chicken soup and Italian dressing mix. Stir in the cream cheese cubes. Pour the mixture over the chicken.
  3. Cover and cook on low for 4 to 5 hours (or high for 2 to 3 hours), until the chicken reaches 165°F and shreds easily.
  4. Shred the chicken in the pot with two forks, stir it into the sauce, and serve over the cooked angel hair pasta.

Notes

The sauce will look thin right when you open the lid, but it thickens as you stir it and as it sits off the heat. If it needs a little help, pop the lid back on and cook on high for 10 to 15 minutes uncovered. This dish reheats beautifully, so it is a strong meal prep candidate.
