Crock Pot Corned Beef Brisket Recipe

Ingredients
  

  • 1 (3 to 4 lb) flat-cut corned beef brisket with spice packet
  • 1 large yellow onion, sliced
  • 4 cloves garlic, smashed
  • 1 (12 oz) bottle beer or 1 1/2 cups water
  • 1 lb small red potatoes, halved
  • 4 medium carrots, peeled and cut into 2-inch chunks
  • 1 small head green cabbage, cut into 4 wedges

Method
 

  1. Layer onion and garlic in a 6-quart slow cooker. Place brisket fat side up, sprinkle with spice packet, and pour liquid around edges.
  2. Cover and cook on LOW for 7–8 hours until fork-tender.
  3. Add potatoes, carrots, and cabbage around the brisket. Cover and cook on LOW for 2 more hours until vegetables are tender.
  4. Rest brisket 5 minutes, then slice against the grain. Serve with the vegetables and spoon some cooking liquid over the top.

Notes

If your brisket is larger or smaller, adjust the cook time using the table above. The vegetables can be skipped entirely if you just want the meat. A quick rest before slicing helps the slices hold together on your plate.
