- Pat the shrimp very dry. Toss with the beaten egg, then with the cornstarch until lightly coated. Let sit while you heat the oil, about 5 minutes.
- Heat the oil in a large skillet over medium-high heat until shimmering. Fry the shrimp in a single layer for about 2 minutes per side until golden and crisp. Drain on paper towels.
- In a large bowl, whisk the mayo, sriracha, honey, rice vinegar, and garlic powder until smooth.
- Add the fried shrimp to the sauce and toss to coat. Plate, scatter with green onions and sesame seeds, and serve immediately.
Notes
Shrimp size and pan heat can vary, so watch the first batch closely. If you like a thicker coating, you can dip the shrimp in egg and cornstarch a second time, though the single coat gives a lighter crunch that works great here.
