Method
- Combine chili powder, smoked paprika, cayenne, garlic powder, and salt. Pat chicken cutlets dry and rub the spice mix over both sides.
- Heat oil in a large skillet over medium‑high heat. Sear the cutlets for 3‑4 minutes per side until golden and cooked through (165°F). Rest on a cutting board.
- Toss cabbage and carrot with mayonnaise, buttermilk, and ranch seasoning until coated. Let slaw sit 5 minutes.
- Warm tortillas. Slice chicken against the grain. Layer chicken and slaw down the center of each tortilla, tuck in the sides, and roll tightly. Slice in half and serve.
Notes
If your chicken breasts are thick, butterfly them horizontally into two thinner cutlets before seasoning. The slaw can be made a day ahead; just keep it chilled and give it a stir.
