Crispy Sourdough Discard Granola Recipe

Ingredients
  

  • 3 cups old-fashioned rolled oats
  • 1 cup raw nuts, roughly chopped
  • 1/2 cup raw seeds (pumpkin or sunflower)
  • 1/2 cup unsweetened shredded coconut (optional)
  • 1/2 cup honey or maple syrup
  • 1/3 cup melted coconut oil or neutral oil
  • 1 tsp vanilla extract
  • 1/2 tsp fine sea salt
  • 1/2 cup sourdough discard

Method
 

  1. Preheat oven to 300°F. Whisk honey, oil, vanilla, salt, and sourdough discard until combined.
  2. Add oats, nuts, seeds, and coconut (if using). Stir to coat. Press onto a parchment-lined sheet pan in an even, compact layer.
  3. Bake 45-50 minutes without stirring, rotating once halfway, until deep golden.
  4. Cool completely on the pan, then break into clusters. Toss in dried fruit if desired.

Notes

For the best clusters, press the mixture down firmly and never stir while baking. If your kitchen is humid, let the granola cool in the turned-off oven with the door cracked to keep it extra crisp.
