- Pat salmon fillets completely dry. Season flesh side with salt and pepper.
- Heat olive oil in a large skillet over high heat. Place fillets skin side down, pressing gently with a spatula for 10 seconds. Sear 4 minutes without moving.
- Flip fillets, reduce heat to medium, and cook 2 to 3 minutes until just firm.
- Plate skin side up and serve immediately with lemon wedges.
Notes
If the skin side of your fillets looks especially thick or tough, use a sharp knife to make a few shallow slashes through the skin before cooking—this stops the fillet from curling and helps the fat render. For the best texture, let the salmon rest on the plate for a minute before cutting into it.
