Crispy Skin Salmon Recipe

Ingredients
  

  • 2 salmon fillets, skin on (6 oz each)
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • 1 tbsp avocado or canola oil
  • 1 tbsp unsalted butter
  • 1 clove garlic, smashed and peeled
  • 1 lemon wedge
  • 1 tbsp chopped fresh dill or parsley

Method
 

  1. Pat the salmon dry with paper towels, especially the skin, and season the flesh side with salt and pepper.
  2. Heat the oil in a heavy skillet over medium-high heat. Place the fillets skin side down and press gently for 10 seconds. Cook undisturbed for 5 to 6 minutes, until the skin is deep golden and releases easily.
  3. Flip the fillets, then add the butter, garlic, and a squeeze of lemon to the pan. Tilt the pan and spoon the foaming butter over the fish for 1 to 2 minutes, until the center feels just firm.
  4. Plate the salmon skin side up, spoon the pan sauce over the top, and scatter the fresh dill. Serve right away.

Notes

If the fillets are much thicker than 1 inch, give the skin side an extra minute before flipping and keep the heat at medium-high so the center cooks through without burning the skin. No resting time is needed, the fish stays moist as long as you do not overcook it.
