- Pat chicken dry and season all over with salt, pepper, garlic powder, and smoked paprika; let sit 20 minutes at room temperature while oven heats to 400°F (200°C).
- Heat oil in a heavy skillet over medium-high until shimmering. Sear chicken skin side down without moving for 5 minutes until deep golden and released.
- Flip skin side up, transfer skillet to oven, and roast until internal temp reaches 160°F (71°C), about 22 to 28 minutes.
- Rest 5 minutes in the pan, then slice the meat off the bone and serve with pan drippings.
Notes
Pulling the chicken at 160°F and letting it rest on the bone carries the center to a safe 165°F while keeping the meat tender. If your breasts are uneven, check the smaller one first and remove it early so it does not overcook.
