Ingredients
  

  • 2 large sweet potatoes (about 1.5 lb)
  • 2 tbsp vegetable oil
  • ½ tsp kosher salt
  • ¼ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp smoked paprika
  • 1 tbsp water
  • 2 tbsp chopped fresh parsley

Method
 

  1. Peel the sweet potatoes and cut them into even ½-inch cubes.
  2. Heat the oil in a large skillet over medium-high heat. Add the potatoes in a single layer, sprinkle with salt, pepper, garlic powder, and smoked paprika, and cook undisturbed for about 4 minutes.
  3. Pour in the water, toss, cover the skillet, and lower heat to medium. Cook 5 minutes, then uncover, raise heat to medium-high, and toss for another 2 to 3 minutes.
  4. Remove from heat, taste and adjust seasoning, and sprinkle with fresh parsley. Serve hot.

Notes

For the crispiest edges, don’t skip the brief steam step. It guarantees the potatoes are tender inside before the final high-heat toss. If your sweet potatoes are especially dry, add a second tablespoon of water before covering.
