- Parboil diced potatoes in salted boiling water for 4 to 5 minutes until just tender, then drain well.
- Melt 1 tablespoon butter in a large skillet over medium heat, add the onion with a pinch of salt, and cook until soft and lightly golden, about 3 to 4 minutes.
- Add remaining butter, potatoes, corned beef, Worcestershire sauce, and pepper. Press into an even layer and cook undisturbed for 5 minutes to form a crust, then flip, press, and cook the other side for 4 to 5 minutes.
- If using eggs, make wells in the hash, crack in eggs, cover, and cook 3 to 4 minutes until whites are set. Serve immediately, with hot sauce if you like.
Notes
If you are topping the hash with eggs, the cook time for that step adds about 4 minutes. If you skip the eggs, the total time drops to around 24 minutes. Taste before adding salt, as the saltiness of corned beef varies.
