Crispy Sesame Tofu Bowls Recipe

Ingredients
  

  • 1 block (14 to 16 oz) extra-firm tofu, pressed and cubed
  • 2 tbsp cornstarch
  • 2 tbsp neutral oil (vegetable or canola)
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp maple syrup
  • 1 tbsp toasted sesame oil
  • 2 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • 1 tbsp rice vinegar
  • 4 cups cooked jasmine rice, warm
  • 1 cup thinly sliced cucumber
  • 1 cup shredded carrots
  • 1 avocado, sliced
  • 2 scallions, sliced
  • 1 tbsp sesame seeds

Method
 

  1. Press the tofu for at least 20 minutes, then cut into 1-inch cubes and toss with cornstarch.
  2. Heat oil in a large nonstick skillet over medium-high. Sear tofu for 3 to 4 minutes per side until golden and crisp.
  3. While tofu cooks, whisk together soy sauce, maple syrup, sesame oil, garlic, ginger, and rice vinegar.
  4. Pour sauce over tofu and cook 1 to 2 minutes, stirring, until the glaze thickens and coats the cubes.
  5. Divide rice among bowls and top with glazed tofu, cucumber, carrots, avocado, scallions, and sesame seeds. Serve immediately.

Notes

If you are short on time, 10 minutes of pressing still makes a difference. For the best texture, reheat leftover tofu in a dry skillet rather than the microwave.
