Crispy Pressed Cuban Sandwich Recipe

Ingredients
  

  • 4 Cuban sandwich rolls, or soft Italian sub rolls
  • 4 tbsp unsalted butter, very soft
  • 3 tbsp yellow mustard
  • 1 lb thinly sliced roast pork
  • 1/2 lb thinly sliced boiled or baked ham
  • 8 thin slices Swiss cheese, about 6 oz total
  • 2 large dill pickles, sliced lengthwise into long thin planks

Method
 

  1. Split the rolls horizontally, leaving a small hinge. Spread the butter on all cut sides, reaching the edges.
  2. Spread the mustard on the bottom halves. Layer the roast pork, ham, cheese, and pickle planks. Close the tops.
  3. Heat a large skillet over medium heat. Place the sandwiches in the pan, press with a heavy weight, and cook until the bottom is deep golden and cheese softens, about 4 minutes.
  4. Flip, press again, and cook the second side until golden, 3 to 4 minutes more. Slice on a diagonal and serve right away.

Notes

If your roast pork is cold from the fridge, let it sit at room temperature for 15 minutes so it warms through more easily in the press. Leftover mojo pork takes these sandwiches to another level.
