- Soak the shrimp in buttermilk while you heat 2 inches of oil to 350°F (175°C) in a deep pot. Let them sit about 5 minutes.
- Whisk together the flour, cornstarch, and all seasonings in a shallow dish.
- Lift shrimp from the buttermilk in batches, let excess drip off, then toss in the flour mixture, pressing the coating onto each shrimp.
- Fry in small batches of 6 shrimp at a time for 2 to 3 minutes until deep golden and crisp. Drain on paper towels.
- Pile onto a platter, sprinkle with flaky salt, and serve right away with your favorite dipping sauce.
Notes
For the best texture, serve these shrimp within 15 minutes of frying. If you’re making a double batch for a party, keep the oven on warm and set up a wire rack over a baking sheet to preserve crispness.
