Crispy Oven Baked Chicken Wings Recipe

Ingredients
  

  • 3 lbs chicken wings, flats and drumettes separated
  • 1 tbsp aluminum-free baking powder
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • ½ cup hot sauce
  • 4 tbsp unsalted butter
  • 1 tbsp honey
  • 1 tsp white vinegar

Method
 

  1. Pat the chicken wings completely dry with paper towels, then toss in a bowl with baking powder, salt, and pepper until fully coated.
  2. Preheat oven to 400°F (200°C). Place a wire rack on a foil-lined baking sheet. Arrange wings skin side up on the rack and bake for 20 minutes, then flip and bake another 20-25 minutes until deeply golden and blistered.
  3. While wings bake, melt butter in a small saucepan over low heat. Remove from heat and whisk in hot sauce, honey, and white vinegar until smooth.
  4. Toss the hot wings immediately in the sauce and pile onto a platter to serve.

Notes

For the crispiest results, use aluminum-free baking powder to avoid a metallic aftertaste. If you do not have a wire rack, line the baking sheet with parchment and flip the wings three times during baking. The undersides will be a bit less crisp but still delicious.
