- Pat the chicken wings completely dry with paper towels, then toss in a bowl with baking powder, salt, and pepper until fully coated.
- Preheat oven to 400°F (200°C). Place a wire rack on a foil-lined baking sheet. Arrange wings skin side up on the rack and bake for 20 minutes, then flip and bake another 20-25 minutes until deeply golden and blistered.
- While wings bake, melt butter in a small saucepan over low heat. Remove from heat and whisk in hot sauce, honey, and white vinegar until smooth.
- Toss the hot wings immediately in the sauce and pile onto a platter to serve.
Notes
For the crispiest results, use aluminum-free baking powder to avoid a metallic aftertaste. If you do not have a wire rack, line the baking sheet with parchment and flip the wings three times during baking. The undersides will be a bit less crisp but still delicious.
